ZANZIBAR RICE

1 TABLESPOON CUMIN SEEDSI TABLESPOON BLACK PEPPER1/4 TABLESPOON CLOVES ("CLOVES" NOT "CLOVES OF GARLIC")I EACH CINNAMON STICK1/4 TABLESPOON GROUND CARDAMOMOIL FOR FRYING3 EACH CLOVES OF GARLIC3 TABLESPOON FRESH GINGERBASMATI3 CUP RiCE (UNCOOKED)2 EACH ONIONS, CHOPPED4 EACH TOMATOES, CHOPPED (OR CANNED TOMATOES)1-2 APPLES, PEELED AND CUT INTO SLICES1 CUP RAISINS OR SULTANAS


CHOP THE GARLIC AND GINGER TOGETHER AND SET ASIDE. WASH THE RICE,DRAIN, AND SET ASIDE.


HEAT OIL IN DEEP POT. FRY ONIONS UNTIL CLEAR. STIR. ADD GARLIC ANDGINGER. CONTINUE STIRRING AND FRYING UNTIL THE FLAVORS HAVE MIXED -IT SHOULD DEVELOP A NICE AROMA.


ADD THE RICE AND STIR IT THOROUGHLY TO COAT EACH GRAIN OF RICE WITHTHE OIL. ADD THE SPICES AND WATER. STIR. WAIT FIVE MINUTES. ADD THETOMATOES. BRING TO A BOIL AND TURN TO SIMMER, COVER.


KEEP COVERED, ADD WATER IF BOTTOM OF POT IS DRY. CONTINUE COOKINGOVER LOW HEAT FOR TWENTY MINUTES.


REMOVE POT FROM STOVE, KEEP COVERED. ADD APPLES AND RAISINS. ALLMOISIURF SHOULD BE ABSORBED BY RICE. SERVE HOT.
