White Fish with Black Beans & Rice
Halibut, grouper, shark or other fatty white fish
Black beans, cooked
Red bell peppers, diced
Shoyu or soy sauce
Sauté garlic and ginger in olive oil in skillet. Add peppers and toss well.
Fold beans into mixture. Add orange juice and shoyu to beans and simmer.
Sprinkle scallions on top of beans. Place raw fish fillets on top of beans.
Cover skillet and steam fish. Serve hot over jasmine rice.
